Reverse Seared Tri Tip

Ingredients

2.5 pounds tri tip trimmed of excess fat
2 tablespoons of Neil Saraps Brisket Seasoning OR favorite BBQ rub

Preparation

Rub meat with brisket seasoning or your favorite BBQ rub and let rest while you get the smoker set up and heated to temperature. Set up smoker to 200°-225° with oak wood. Place tri tip in smoker and smoke until the internal temperature reaches 110°. Remove tri tip from smoker and adjust temperature of your smoker or grill to cook at 400°. Return to smoker and sear both sides for about 3 minutes or until it reaches an internal temperature of 130°. Wrap tri tip in butcher paper or tin foil and let rest for 15 minutes before slicing thin and serving.
